12 mini sweet bell peppers (red, yellow, or orange)

1 cup cooked shredded chicken (rotisserie works great)

1 cup shredded cheddar cheese

1/2 cup black beans (drained and rinsed)

1/4 cup corn (canned or frozen)

1/4 cup salsa

1 teaspoon taco seasoning

1/4 cup sliced green onions

Fresh cilantro leaves for garnish

Sour cream for serving (optional)

Olive oil for drizzling

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Peppers: Cut the mini sweet bell peppers in half lengthwise and remove the seeds. Place them skin-side down on a baking sheet lined with parchment paper.

      Mix Filling: In a large bowl, combine the shredded chicken, shredded cheddar cheese, black beans, corn, salsa, taco seasoning, and half of the sliced green onions. Mix well to combine all ingredients evenly.

        Fill the Peppers: Spoon the chicken mixture into each pepper half, filling them generously. Make sure to pack them a little to ensure a hearty bite.

          Drizzle with Olive Oil: Lightly drizzle the filled peppers with olive oil to help them roast and achieve a slight crispiness.
