1 cup Graham cracker crumbs

2 tablespoons sugar

1/4 cup unsalted butter, melted

16 oz cream cheese, softened

1 cup powdered sugar

1 teaspoon vanilla extract

1 1/2 cups heavy whipping cream

Fresh berries (strawberries, blueberries, or raspberries) for topping

Mint leaves for garnish (optional)

Prepare the crust: In a medium bowl, combine the Graham cracker crumbs, sugar, and melted butter. Mix until well combined. The mixture should resemble wet sand.

    Make the cheesecake filling: In a large mixing bowl, use an electric mixer to beat the softened cream cheese until creamy and smooth. Gradually add the powdered sugar and vanilla extract, mixing until fully incorporated and fluffy.

      Whip the cream: In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture, being careful to maintain the light and airy texture.
