When preparing your Mini Crustless Broccoli Cheddar Quiche Bites, it’s essential to achieve the right balance in filling each muffin cup. Ideally, fill each cup to about three-quarters full. This allows the egg mixture to expand while baking without overflowing, resulting in deliciously puffed quiche bites that maintain their shape and structure. If the cups are underfilled, you may end up with flat quiches, while overfilling can lead to messy spills and uneven cooking.

Ingredients

2 cups fresh broccoli florets, steamed and chopped

1 cup sharp cheddar cheese, shredded

6 large eggs

1/2 cup milk (or a non-dairy alternative)

1/4 cup grated Parmesan cheese

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

Cooking spray or olive oil for greasing

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Prepare the Muffin Tin: Lightly grease a muffin tin with cooking spray or a bit of olive oil to prevent sticking.

Mix the Ingredients: In a large mixing bowl, whisk together the eggs and milk until well combined. Add in the garlic powder, onion powder, salt, and pepper. Stir until everything is incorporated.

Add Broccoli and Cheese: Fold in the steamed broccoli florets and the shredded cheddar cheese until evenly distributed throughout the egg mixture.

Fill Muffin Tin: Pour the mixture into the prepared muffin tin, filling each cup about 3/4 full. Sprinkle a little grated Parmesan cheese on top of each quiche for added flavor.

Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until the quiche bites are puffed and slightly golden on top. A toothpick inserted into the center should come out clean.

Cool and Serve: Let the mini quiches cool in the tin for about 5 minutes before gently loosening them with a knife and removing them. Serve warm or at room temperature.
