Mini Cinnamon Roll Bites

1 can (16 oz.) refrigerated crescent roll dough

1/4 cup unsalted butter, melted

1/2 cup brown sugar, packed

1 tablespoon ground cinnamon

1/4 cup powdered sugar

1 teaspoon vanilla extract

1 tablespoon milk (adjust for desired icing consistency)

Optional: chopped pecans or walnuts for topping

Preheat the Oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone baking mat.

    Prepare the Filling: In a small bowl, mix the brown sugar and ground cinnamon together. Set aside.

      Roll Out the Dough: Unroll the crescent roll dough on a clean surface, gently pressing the seams together to form a rectangle.

        Add the Butter & Sugar: Brush the melted butter evenly over the dough, then sprinkle the cinnamon-sugar mixture on top, covering the entire surface.

          Roll Up the Dough: Starting from one long edge, tightly roll the dough into a log.

            Cut into Bites: Using a sharp knife or a pizza cutter, slice the log into approximately 1-inch pieces. You should have about 12 mini rolls.

              Arrange on Baking Sheet: Place the bite-sized rolls cut-side up on the prepared baking sheet, leaving some space between them for rising.

                Bake: Bake in the preheated oven for 12-15 minutes, or until the rolls are golden brown and cooked through. Remove from the oven and let them cool for a few minutes.

                  Prepare the Icing: While the rolls are cooling, whisk together the powdered sugar, vanilla extract, and milk in a small bowl. Adjust the milk to reach your desired icing consistency.

                    Drizzle and Serve: Drizzle the icing over the warm mini cinnamon roll bites, adding chopped nuts on top if desired. Serve warm and enjoy!
