1 pound ground chicken

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 packet taco seasoning

1 cup black beans, rinsed and drained

1 cup corn (fresh, frozen, or canned)

1 cup shredded cheese (cheddar or Mexican blend)

1 package refrigerated crescent dough rolls

1 egg (for egg wash)

Fresh cilantro, chopped (for garnish)

Sour cream and salsa (for serving)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

    Cook the Chicken: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing for about 2-3 minutes until they're softened and fragrant.

      Add the Chicken: Increase the heat to medium-high and add the ground chicken to the skillet. Cook until the chicken is browned and cooked through, about 5-7 minutes. Drain any excess fat.

        Season the Mixture: Stir in the taco seasoning, black beans, and corn. Mix well and allow it to cook for another 2-3 minutes until heated. Remove from heat and let it cool slightly.

          Prepare Crescent Dough: While the chicken mixture cools, unroll the crescent dough. Lay the triangles on a round pizza stone or baking sheet, overlapping the wider ends to create a star shape.

            Fill the Dough: Spoon the chicken mixture onto the wider ends of the crescent dough, then sprinkle with shredded cheese.

              Wrap the Bites: Gently fold the pointed ends of the dough over the filling, tucking them under the dough at the base to secure. You can pinch the seams together for a more polished look.

                Apply Egg Wash: In a small bowl, whisk the egg. Brush the egg wash over the dough to give it a nice golden color when baking.

                  Bake: Place the baking sheet in the preheated oven and bake for 20-25 minutes, or until the crescent rolls are golden brown and puffed up.
