1 cup cooked chicken, shredded (rotisserie works great!)

1 cup tortilla chips, crushed

1 cup shredded cheddar cheese

1 small can (4 oz) sliced jalapeños, drained

1 medium tomato, diced

1/4 cup red onion, finely chopped

1/4 cup fresh cilantro, chopped

4 tablespoons sour cream

2 tablespoons salsa

8 slices of whole-grain or sourdough bread

Olive oil for brushing

Salt and pepper to taste

Preheat the Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

    Prepare the Chicken Mixture: In a medium bowl, combine the shredded chicken with diced tomatoes, red onion, jalapeños, and cilantro. Season with salt and pepper to taste. Mix until well combined.

      Toast the Bread: Lay the bread slices on the baking sheet and lightly brush one side of each slice with olive oil. Bake in the oven for 5-7 minutes, or until golden and crisp.

        Assemble the Stacks: Remove the bread from the oven and flip them over. Start layering: add a layer of the chicken mixture, followed by a sprinkle of crushed tortilla chips, and then a generous handful of shredded cheddar cheese.

          Bake Again: Return the assembled stacks to the oven and bake for an additional 8-10 minutes, or until the cheese is melted and bubbly.

            Garnish and Serve: Once done, remove from the oven and drizzle sour cream and salsa over the top. Optionally, garnish with extra cilantro. Cut each stack into bite-sized pieces for easy serving.
