1 pound boneless, skinless chicken breasts, diced

1 tablespoon olive oil

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon paprika

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper, to taste

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 small onion, sliced

1 cup shredded cheese (cheddar or Mexican blend)

12 mini taco cones (store-bought or homemade)

Fresh cilantro, chopped (for garnish)

Sour cream and salsa (for serving)

Instructions
 

Prep the Chicken: In a mixing bowl, combine diced chicken with olive oil, chili powder, cumin, paprika, garlic powder, onion powder, salt, and pepper. Toss until the chicken is evenly coated.

    Cook the Chicken: Preheat a skillet over medium-high heat. Add the marinated chicken to the skillet and cook for about 5-7 minutes, stirring occasionally, until the chicken is browned and cooked through. Remove the chicken and set aside.

      Sauté the Vegetables: In the same skillet, add the sliced bell peppers and onion. Sauté for about 4-5 minutes until they are tender but still crisp.

        Combine Filling: Return the cooked chicken to the skillet with the vegetables. Stir to combine and heat through for an additional 2 minutes.

          Preheat the Taco Cones: If using store-bought mini taco cones, preheat your oven to 350°F (175°C) and place taco cones on a baking sheet for about 5 minutes to warm.

            Assemble the Taco Cones: Once the taco cones are warm, fill each cone with the chicken and vegetable mixture. Top with a sprinkle of shredded cheese.

              Melt the Cheese: Place the filled taco cones back into the oven for about 3 minutes, just long enough to melt the cheese.

                Garnish and Serve: Remove from the oven and garnish with fresh cilantro. Serve warm with sour cream and salsa on the side.
