Ingredients
  

1 pound ground chicken

1 small onion, finely chopped

2 cloves garlic, minced

1 can (15 oz) enchilada sauce (mild or spicy based on preference)

1 cup black beans, drained and rinsed

1 cup corn kernels (frozen or fresh)

1 cup shredded cheese (Mexican blend or cheddar)

12 slider-sized soft buns (or small slider rolls)

1 tablespoon olive oil

1 teaspoon ground cumin

1 teaspoon chili powder

Salt and pepper to taste

Sour cream, diced jalapeños, and fresh cilantro for garnish (optional)

Instructions
 

Cook the Chicken Mixture:

    In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté for 3–4 minutes until translucent. Stir in the minced garlic and cook for an additional 1 minute.

      Brown the Chicken:

        Add the ground chicken to the skillet and cook until browned, breaking it up into small pieces with a spatula, about 6–7 minutes.

          Add Flavor:

            Stir in the cumin, chili powder, salt, and pepper. Mix well to ensure the spices are evenly distributed.

              Combine the Ingredients:

                Pour in the enchilada sauce, black beans, and corn. Stir to combine all ingredients thoroughly and let simmer for 5 minutes, allowing the flavors to meld.

                  Assemble the Sliders:

                    Preheat your oven to 350°F (175°C). Slice the slider buns in half horizontally and place the bottom halves on a baking sheet. Spoon a generous amount of the chicken mixture onto each slider bun and sprinkle with shredded cheese.
