Ingredients

2 cups cooked broccoli florets, chopped

2 large russet potatoes, peeled and grated

1 cup sharp cheddar cheese, grated

1/2 cup onion, finely chopped

2 cloves garlic, minced

1 large egg

1/4 cup all-purpose flour

1 tsp paprika

1/2 tsp salt

1/4 tsp black pepper

1/4 tsp crushed red pepper flakes (optional)

Olive oil, for frying

Fresh chives, finely chopped (for garnish)

Sour cream or Greek yogurt (for serving)

Instructions

Preparation of Potatoes: Begin by placing the grated potatoes into a clean kitchen towel. Twist the towel to remove as much moisture as possible. This is key to achieving crispy hash stacks.

Mix Ingredients: In a large mixing bowl, combine the drained and grated potatoes, chopped broccoli, cheddar cheese, onion, garlic, egg, flour, paprika, salt, black pepper, and red pepper flakes (if using). Mix well until all ingredients are thoroughly incorporated.

Form the Stacks: With clean hands, take about 1/4 cup of the mixture and form small patties, roughly 2 inches in diameter and 1 inch thick. Place them on a plate or parchment paper.

Heat the Oil: In a large non-stick skillet, heat a few tablespoons of olive oil over medium heat. You want the oil to be hot, but not smoking.

Cook the Hash Stacks: Once the oil is hot, carefully add the patties to the skillet (do not overcrowd). Cook for about 3-4 minutes on each side, or until they are golden brown and crispy. You may need to add more oil in between batches.

Drain Excess Oil: Once cooked, transfer the stacks to a paper towel-lined plate to absorb any excess oil.

Garnish and Serve: Stack 2-3 of the crispy hash stacks on a serving plate, garnish with fresh chives, and serve warm with a dollop of sour cream or Greek yogurt on the side.

Enjoy: Dig in and relish the crunchy texture paired with savory cheddar and fresh broccoli!
