4 small whole wheat pita breads

4 large eggs

1/2 cup cooked chorizo (or breakfast sausage)

1/4 cup diced bell peppers (red and green)

1/4 cup diced onions

1/2 cup shredded cheddar cheese

1/4 cup fresh cilantro, chopped

1/2 avocado, sliced

1/4 cup salsa (your choice of mild or spicy)

Salt and pepper, to taste

Olive oil, for cooking

Prepare the Pita: Preheat your oven to 350°F (175°C). Cut each pita bread into halves, creating circular pockets. Place them on a baking sheet and toast them in the oven for about 5-7 minutes until they are slightly crispy but still pliable.

    Cook the Filling: In a skillet, heat a drizzle of olive oil over medium heat. Add the diced onions and bell peppers, sautéing until they are soft and fragrant, about 3-5 minutes.

      Add the Protein: Stir in the cooked chorizo (or sausage) and cook for another 2-3 minutes until heated through.

        Scramble the Eggs: In a bowl, whisk the eggs with salt and pepper. Pour the egg mixture into the skillet and stir gently, cooking until scrambled and fully set, around 3-4 minutes. Remove from heat and stir in half of the chopped cilantro.
