1 lb ground breakfast sausage (or turkey sausage for a lighter option)

1 cup diced bell peppers (mix of red and green)

1/2 cup finely chopped onion

6 large eggs

1/4 cup milk

1 1/2 cups shredded cheddar cheese

1 teaspoon taco seasoning

Salt and pepper to taste

1 package of mini flour tortillas (about 12-15 tortillas)

Fresh cilantro, chopped (for garnish)

Salsa or hot sauce (for serving)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 375°F (190°C). Grease a muffin tin with cooking spray or oil.

    Cook the Sausage: In a large skillet over medium heat, cook the ground sausage until browned and fully cooked, breaking it into small pieces as it cooks. Drain excess grease if necessary.

      Sauté Veggies: Add the diced bell peppers and chopped onion to the skillet with the sausage. Cook for about 5 minutes, until the vegetables are soft. Season with taco seasoning, salt, and pepper; mix well to combine.

        Whisk the Eggs: In a large bowl, whisk the eggs and milk together until well combined. Stir in the cooked sausage mixture and half of the shredded cheese.

          Prepare the Shells: Cut each mini tortilla into smaller circles (or use a round cutter) and press them into the greased muffin tin wells to form little cups.

            Fill the Cups: Spoon the egg and sausage mixture into each tortilla cup, filling them about 3/4 full. Top with the remaining shredded cheese.

              Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until the egg is set and the tops are golden brown.

                Cool and Serve: Remove the casserole bites from the oven and let them cool slightly for about 5 minutes. Gently remove them from the muffin tin using a fork or a small spatula.
