1 block (14 oz) firm tofu, pressed and drained

1 cup BBQ sauce (store-bought or homemade)

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1 tablespoon soy sauce

1 head of butter lettuce or romaine lettuce, leaves separated

1 small red bell pepper, diced

1 small cucumber, diced

1/4 cup green onions, chopped

Fresh cilantro (optional, for garnish)

Lime wedges (for serving)

Instructions
 

Prepare the Tofu: Cut the pressed tofu into small cubes, about 1/2 inch in size.

    Marinate: In a large bowl, combine the BBQ sauce, olive oil, smoked paprika, garlic powder, onion powder, and soy sauce. Add the tofu cubes and gently toss until well-coated. Let it marinate for at least 30 minutes, or overnight in the refrigerator for more flavor.

      Cook the Tofu: Preheat a non-stick skillet over medium heat. Once hot, add the marinated tofu cubes (reserve excess marinade) and cook for about 8-10 minutes, stirring occasionally, until they're golden brown and slightly caramelized. If desired, pour in a little of the reserved marinade towards the end for extra flavor.

        Assemble the Boats: While the tofu cooks, prepare the lettuce leaves. Choose large, intact leaves for the base of your boats.

          Fill the Boats: Once the tofu is cooked, take a lettuce leaf and fill it with a few tofu cubes. Top with diced red bell pepper, cucumber, and green onions.
