Instructions

Preheat the Oven: Start by preheating your oven to 350°F (175°C). Grease a muffin tin or line it with paper liners to prevent sticking.

Prepare the Meatloaf Mixture: In a large mixing bowl, combine the ground beef, breadcrumbs, chopped onion, Parmesan cheese, egg, minced garlic, Worcestershire sauce, smoked paprika, salt, and pepper. Mix everything together until just combined, being careful not to over-mix.

Shape the Muffins: Spoon the meat mixture into the prepared muffin tin, filling each cup about 2/3 full. Drizzle about 1 tablespoon of BBQ sauce over each muffin, using a toothpick or the back of a spoon to spread it if desired.

Bake: Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the meatloaf muffins are cooked through and a meat thermometer reads 160°F (70°C).

Make the Mashed Potatoes: While the meatloaf muffins are baking, boil a pot of salted water. Add the cubed potatoes and cook until tender, about 15-20 minutes. Drain well.

Mash the Potatoes: Return the drained potatoes to the pot. Add butter and milk, then mash until smooth and creamy. Season with salt and pepper to taste. If you’d like a creamier consistency, stir in additional milk.

Serve: Once the meatloaf muffins are done, remove them from the oven and let them cool slightly in the pan. Carefully pop them out and serve with a generous scoop of mashed potatoes on the side, garnished with chopped chives if desired. Drizzle any remaining BBQ sauce over the top for extra flavor.
