1 can young jackfruit in water or brine, drained and rinsed

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1/2 cup BBQ sauce (your favorite brand or homemade)

1 teaspoon smoked paprika

1/2 teaspoon cumin

Salt and pepper, to taste

12 mini nacho cups (store-bought or homemade)

1 cup shredded cheddar cheese (or vegan cheese for a plant-based option)

1/2 cup cherry tomatoes, diced

1/4 cup cilantro, chopped (optional, for garnish)

1/4 cup sour cream or vegan sour cream (for serving)

Instructions
 

Prepare the Jackfruit: Begin by slicing the jackfruit into smaller pieces and removing any hard cores. This will help mimic shredded meat.

    Sauté Vegetables: In a medium skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and cook for an additional 1 minute until fragrant.

      Cook the Jackfruit: Add the prepared jackfruit to the skillet. Sprinkle in the smoked paprika, cumin, salt, and pepper. Stir well to combine. Cook for about 5 minutes, allowing the jackfruit to absorb the flavors.

        Add BBQ Sauce: Pour in the BBQ sauce and stir to coat the jackfruit thoroughly. Reduce heat to low and let it simmer for another 10 minutes, stirring occasionally until the jackfruit is tender and pulls apart easily.

          Create Nacho Cups: While the jackfruit is simmering, preheat your oven to 375°F (190°C). Place the mini nacho cups on a baking sheet and fill each cup with the BBQ jackfruit mixture. Top each cup with shredded cheese.

            Melt the Cheese: Bake in the preheated oven for about 5-7 minutes, or until the cheese is melted and bubbly. Keep an eye on them to avoid over-browning.

              Garnish and Serve: Remove the nacho cups from the oven and top with diced cherry tomatoes and cilantro, if desired. Serve warm with a dollop of sour cream or vegan sour cream on the side.
