Mini Apple Pie Cheesecakes

1 cup graham cracker crumbs

4 tablespoons unsalted butter, melted

2 tablespoons granulated sugar

2 (8 oz) packages cream cheese, softened

1 cup powdered sugar

1 teaspoon vanilla extract

2 large eggs

2 cups peeled and diced apples (Granny Smith or Honeycrisp works well)

1 teaspoon ground cinnamon

1/2 teaspoon nutmeg

1 tablespoon lemon juice

Whipped cream and additional apple slices for garnish (optional)

Instructions
 

Prepare the crust: Preheat your oven to 350°F (175°C). In a medium bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Stir until the mixture resembles wet sand.

    Form the crusts: Line a muffin tin with cupcake liners. Evenly distribute the graham cracker mixture into the liners, pressing down firmly with the bottom of a glass or your fingers to create a solid base. Bake for 5-7 minutes until set and lightly golden. Remove and let cool.

      Make the filling: In a mixing bowl, beat the softened cream cheese until smooth. Gradually add the powdered sugar and vanilla extract, mixing until thoroughly combined. Add the eggs one at a time, mixing just until incorporated.

        Prepare the apple filling: In a separate bowl, combine the diced apples with lemon juice, cinnamon, and nutmeg, tossing to coat the apples evenly.

          Layer the mixtures: Spoon a layer of the cream cheese mixture over the cooled crusts, filling each liner about 2/3 full. Add a spoonful of the spiced apple mixture on top of the cream cheese filling in each liner. You may add more cream cheese filling on top if desired to cover the apples.

            Bake: Place the muffin tin back in the oven and bake for 18-22 minutes, or until the cheesecakes are set but still slightly jiggly in the center.

              Cool and chill: Remove from the oven and let cool at room temperature for about 20 minutes. Transfer to the refrigerator to chill for at least 2 hours before serving.

                Garnish and serve: Before serving, top each mini cheesecake with a dollop of whipped cream and a slice of fresh apple if desired. Enjoy your delightful and cozy mini apple pie cheesecakes!
