1 large apple, peeled and diced (about 1 cup)

1 cup all-purpose flour

1/2 cup rolled oats

1/2 cup brown sugar, packed

1/2 tsp baking soda

1/2 tsp baking powder

1 tsp ground cinnamon

1/4 tsp salt

1/2 cup milk (or dairy alternative)

1/4 cup vegetable oil (or melted coconut oil)

1 large egg

1 tsp vanilla extract

Optional: 1/4 cup chopped walnuts or pecans

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a mini muffin tin or line it with mini muffin liners.

    Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, rolled oats, brown sugar, baking soda, baking powder, ground cinnamon, and salt until combined.

      Prepare Wet Ingredients: In a separate bowl, whisk together the milk, vegetable oil, egg, and vanilla extract until well blended.

        Combine Mixtures: Pour the wet mixture into the dry mixture and stir until just combined. Avoid over-mixing; a few lumps are okay.
