4 cups fresh (or frozen) corn kernels

1 cup mayonnaise

1 cup sour cream

1 cup crumbled feta cheese (or cotija cheese)

1/2 cup diced red onion

1/4 cup chopped fresh cilantro

2 cloves garlic, minced

1-2 jalapeños, seeded and finely chopped (adjust to spice preference)

Juice of 2 limes

1 teaspoon chili powder

1/2 teaspoon cumin

Salt and pepper to taste

Tortilla chips for serving

Prepare the Corn: If using fresh corn, grill the corn on a hot grill for about 8-10 minutes, turning occasionally until cooked and charred. If using frozen corn, simply thaw and sauté in a skillet over medium heat until heated through and slightly golden, about 5 minutes. Let cool slightly.

    Mix the Base: In a large mixing bowl, combine the mayonnaise, sour cream, feta cheese, red onion, cilantro, minced garlic, and chopped jalapeños. Stir well to create a creamy mixture.

      Season and Incorporate Corn: Add the grilled or sautéed corn to the mixing bowl. Squeeze the lime juice over the mixture and sprinkle in the chili powder, cumin, salt, and pepper. Fold everything together gently until the corn is evenly distributed throughout the dip.
