2 cups shredded sharp cheddar cheese

1 cup shredded Monterey Jack cheese

8 oz cream cheese, softened

1 cup heavy cream

1 cup frozen corn, thawed

1 small jalapeño, finely diced (seeds removed for less heat)

1/4 cup diced red onion

2 cloves garlic, minced

1 tsp chili powder

1 tsp cumin

1/2 tsp smoked paprika

1/2 tsp salt

1/4 tsp black pepper

1/4 cup fresh cilantro, chopped (for garnish)

Tortilla chips (for serving)

Instructions
 

Prep the Ingredients: In a medium bowl, combine shredded cheddar and Monterey Jack cheeses. Set aside.

    Cook the Base: In a large saucepan over medium heat, add the thawed corn, diced jalapeño, red onion, and minced garlic. Sauté for about 3-4 minutes or until the onions are translucent and fragrant.

      Melt the Cream Cheese: Add the softened cream cheese to the saucepan, stirring continuously until fully melted and combined with the vegetables.

        Add Heavy Cream: Pour in the heavy cream and continue stirring to combine. Cook for an additional 2-3 minutes until the mixture begins to heat through.

          Mix in Spices and Cheeses: Stir in the chili powder, cumin, smoked paprika, salt, and black pepper. Gradually add the shredded cheese mixture, a handful at a time, stirring constantly until melted and creamy.
