4 bone-in, skin-on chicken thighs

4 cloves garlic, minced

2 tablespoons olive oil

1 lemon (zested and juiced)

1 teaspoon dried oregano

1 teaspoon dried thyme

1 teaspoon paprika

Salt and pepper to taste

1 cup cherry tomatoes, halved

1/2 cup Kalamata olives, pitted and halved

1/4 cup fresh parsley, chopped (for garnish)

Marinate the Chicken: In a large bowl, combine the minced garlic, olive oil, lemon zest, lemon juice, oregano, thyme, paprika, salt, and pepper. Whisk until well combined. Add the chicken thighs to the bowl, ensuring they are well coated with the marinade. Cover and refrigerate for at least 30 minutes, or ideally, overnight for maximum flavor.

    Preheat the Oven: Preheat your oven to 400°F (200°C).

      Prepare the Baking Dish: In a large baking dish, arrange the marinated chicken thighs in a single layer, skin-side up. Pour any remaining marinade over the chicken. Scatter the halved cherry tomatoes and Kalamata olives around the chicken.

        Bake the Chicken: Place the baking dish in the preheated oven and bake for 35-40 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the skin is golden and crispy.
