4 pieces of whole wheat flatbread

1 cup hummus (store-bought or homemade)

1 cup cooked quinoa

1 cup cherry tomatoes, halved

1 cucumber, thinly sliced

1 bell pepper (red, yellow, or orange), sliced

1 cup mixed greens (spinach, arugula, or spring mix)

1/2 cup Kalamata olives, pitted and sliced

1/2 cup feta cheese, crumbled

2 tablespoons olive oil

2 tablespoons lemon juice

1 teaspoon dried oregano

Salt and pepper, to taste

Prepare the Dressing: In a small bowl, mix the olive oil, lemon juice, dried oregano, salt, and pepper. Whisk until well combined and set aside.

    Assemble the Sandwiches: Lay out the flatbread on a clean surface. Spread a generous layer of hummus on each flatbread, leaving a little margin around the edges.

      Add the Fillings: Evenly distribute the cooked quinoa, cherry tomato halves, sliced cucumber, bell pepper, mixed greens, Kalamata olives, and crumbled feta cheese among the flatbreads.

        Drizzle with Dressing: Drizzle the prepared dressing over the fillings on each flatbread for added flavor.
