Mediterranean Chickpea Salad

Ingredients
  

1 can (15 oz) chickpeas, drained and rinsed

1 cup cherry tomatoes, halved

1 large cucumber, diced

1/2 red onion, finely chopped

1/2 bell pepper (red or yellow), diced

1 cup Kalamata olives, pitted and halved

1/4 cup fresh parsley, chopped

1/4 cup fresh mint, chopped

1/2 cup feta cheese, crumbled

Juice of 1 lemon

3 tablespoons extra virgin olive oil

1 teaspoon dried oregano

Salt and black pepper, to taste

Instructions
 

In a large mixing bowl, combine the rinsed chickpeas, halved cherry tomatoes, diced cucumber, chopped red onion, and diced bell pepper. Mix well to combine the vegetables with the chickpeas.

    Add the Kalamata olives, chopped parsley, and chopped mint to the bowl. Stir to incorporate all the ingredients evenly.

      In a small bowl, whisk together the fresh lemon juice, extra virgin olive oil, dried oregano, salt, and black pepper. Adjust the seasoning to taste.

        Pour the dressing over the salad mixture, and toss gently until all the ingredients are well-coated.

          Sprinkle the crumbled feta cheese over the top of the salad. Optionally, you can mix it in or leave it on top for presentation.

            Cover the salad and refrigerate for at least 30 minutes before serving to allow the flavors to meld together. This dish can be served chilled or at room temperature.
