1 lb ground beef (or a mix of beef and pork)

1/2 cup breadcrumbs

1/4 cup ketchup (plus extra for topping)

1/4 cup finely chopped onion

1/4 cup finely chopped bell pepper (any color)

1 large egg

2 cloves garlic, minced

1 tablespoon Worcestershire sauce

1 teaspoon dried thyme

Salt and pepper to taste

For the Mashed Potatoes:

2 lbs russet potatoes, peeled and cubed

1/2 cup milk (more as needed)

1/4 cup unsalted butter

Salt and pepper to taste

1/2 cup shredded cheddar cheese (optional)

For Assembly:

1/4 cup chopped fresh parsley (for garnish)

1/2 cup shredded cheese (for topping, optional)

Preheat the Oven:

    Preheat your oven to 375°F (190°C).

      Make the Meatloaf:

        In a large bowl, combine the ground beef, breadcrumbs, ketchup, onion, bell pepper, egg, minced garlic, Worcestershire sauce, thyme, salt, and pepper. Mix until just combined, being careful not to overwork the meat.

          Shape and Bake:

            Form the meat mixture into a loaf shape and place it in a greased baking dish. Spread a thin layer of ketchup on top for extra flavor. Bake for 30 to 35 minutes, or until the internal temperature reaches 160°F (71°C). Remove from oven and let it rest for 10 minutes.

              Prepare the Mashed Potatoes:

                While the meatloaf is baking, place the cubed potatoes in a large pot of salted water. Bring to a boil and cook until tender, about 15-20 minutes. Drain well.

                  Mash Potatoes:

                    In the same pot (off the heat), add butter and milk to the drained potatoes. Mash until smooth and creamy. Add salt and pepper to taste. For extra creaminess, you can incorporate more milk.

                      Assemble the Casserole:

                        Once the meatloaf has rested, slice it and layer the slices evenly over the bottom of a casserole dish. Spoon the mashed potatoes over the meatloaf, spreading it out evenly. If desired, sprinkle shredded cheese on top.

                          Bake Again:

                            Bake the assembled casserole in the oven for another 20-25 minutes, until the top is golden and bubbly.

                              Garnish and Serve:

                                Remove from the oven, let it cool for a few minutes, and garnish with chopped fresh parsley before serving.
