For the Meatballs:

1 pound ground beef (or turkey for a lighter option)

1/2 cup breadcrumbs (preferably seasoned)

1/4 cup grated Parmesan cheese

1/4 cup fresh parsley, chopped

1 garlic clove, minced

1 large egg

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon dried Italian herbs (oregano, basil, thyme)

For the Garlic Roast Potatoes:

1.5 pounds baby potatoes, halved

4 tablespoons olive oil

4 garlic cloves, minced

1 teaspoon dried rosemary

1 teaspoon paprika

Salt and pepper to taste

Fresh parsley, for garnish

Preheat the Oven:

    Preheat your oven to 425°F (220°C).

      Prepare the Meatballs:

        In a large mixing bowl, combine the ground beef, breadcrumbs, Parmesan cheese, chopped parsley, minced garlic, egg, salt, pepper, and Italian herbs. Mix thoroughly until all ingredients are well combined.

          Form the Meatballs:

            Using your hands, shape the mixture into meatballs, about 1 inch in diameter. Place them on a parchment-lined baking sheet.

              Prepare the Garlic Roast Potatoes:

                In a large mixing bowl, toss the halved baby potatoes with olive oil, minced garlic, rosemary, paprika, salt, and pepper until evenly coated.

                  Roast the Potatoes:

                    Spread the seasoned potatoes on another baking sheet in a single layer. Roast in the preheated oven for about 25 minutes.

                      Bake the Meatballs:

                        After the potatoes have been roasting for 10 minutes, add the baking sheet with meatballs to the oven. Bake for an additional 15-20 minutes, or until the meatballs are cooked through and golden brown.

                          Serve:

                            Once both the meatballs and potatoes are done, remove them from the oven. Garnish the potatoes with fresh parsley. Plate the meatballs alongside the roasted potatoes and enjoy!
