Ingredients

4 salmon fillets (6 oz each)

1 cup pecans, finely chopped

1/2 cup breadcrumbs (panko or regular)

1/4 cup maple syrup

2 tablespoons Dijon mustard

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish, optional)

Lemon wedges (for serving)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Prepare the Pecan Mixture: In a medium bowl, combine the finely chopped pecans, breadcrumbs, garlic powder, smoked paprika, salt, and pepper. Mix well to evenly distribute the ingredients.

Prepare the Salmon Fillets: Pat the salmon fillets dry with paper towels. Season them lightly with salt and pepper on both sides.

Make the Maple Glaze: In a small bowl, whisk together the maple syrup, Dijon mustard, and olive oil until well combined.

Coat the Salmon: Place each salmon fillet on the prepared baking sheet. Brush a generous amount of the maple glaze over the top of each fillet. Make sure to cover the surface well.

Add the Pecan Crust: Gently press the pecan mixture on top of the glazed salmon, ensuring an even layer.

Bake the Salmon: Bake in the preheated oven for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.

Garnish and Serve: Once out of the oven, let the salmon rest for a few minutes. Garnish with fresh parsley if desired and serve with lemon wedges on the side for a zesty finish.
