1 cup grated zucchini (about 1 medium zucchini, drained)

1 cup all-purpose flour

1/2 cup almond flour

1/2 cup brown sugar

1/4 cup maple syrup

1/4 cup vegetable oil

1 large egg

1 tsp vanilla extract

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp ground cinnamon

1/4 tsp nutmeg

1/4 tsp salt

1/2 cup powdered sugar (for glaze)

2 tbsp maple syrup (for glaze)

1 tbsp milk (or non-dairy alternative, for glaze)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a donut pan with non-stick spray or lightly oil it.

    Prepare Zucchini: Grate the zucchini using a box grater. Place the grated zucchini in a clean dish towel and wring out excess moisture. This helps prevent soggy donuts.

      Mix Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, almond flour, baking powder, baking soda, cinnamon, nutmeg, and salt.

        Combine Wet Ingredients: In another bowl, combine the brown sugar, maple syrup, vegetable oil, egg, and vanilla extract. Mix until well combined.

          Combine Mixtures: Pour the wet ingredients into the dry ingredient bowl and fold them together until just combined. Be careful not to overmix. Gently fold in the grated zucchini until evenly distributed.

            Fill Donut Pan: Spoon the batter into the prepared donut pan, filling each cavity about 2/3 full. Use a piping bag or a ziplock bag with the corner snipped for easier filling, if desired.
