1/2 cup unsweetened applesauce

1/4 cup vegetable oil

2 large eggs

1 teaspoon vanilla extract

1/2 cup pure maple syrup (for glaze)

1/2 cup powdered sugar (for glaze)

1/4 teaspoon vanilla extract (for glaze)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.

    Mix Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, salt, ground cinnamon, and ground nutmeg until well combined.

      Mix Wet Ingredients: In a separate bowl, combine the milk, applesauce, vegetable oil, eggs, and vanilla extract. Whisk until smooth.

        Combine Mixtures: Pour the wet ingredients into the dry ingredients. Gently fold the mixtures together using a spatula until just combined. Be careful not to overmix; a few lumps are perfectly fine.
