Ingredients

4 medium carrots, peeled and cut into sticks

4 medium parsnips, peeled and cut into sticks

3 tablespoons olive oil

2 tablespoons pure maple syrup

1 teaspoon sea salt

1/2 teaspoon black pepper

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

1 tablespoon unsalted butter (optional, for extra richness)

Zest of 1 lemon (for garnish)

Chopped parsley (for garnish)

Instructions

Preheat the Oven: Begin by preheating your oven to 400°F (200°C). This temperature is perfect for achieving caramelization on the veggies.

Prepare the Veggies: In a large mixing bowl, combine the carrot and parsnip sticks. The uniform size will ensure even cooking.

Mix the Glaze: In a small bowl, whisk together the olive oil, maple syrup, sea salt, black pepper, and fresh thyme.

Coat the Vegetables: Pour the maple glaze over the cut vegetables. Toss well until every piece is evenly coated in the sweet mixture.

Arrange on Baking Sheet: Spread the glazed carrots and parsnips in an even layer on a large baking sheet lined with parchment paper for easy cleanup.

Roasting Time: Place the baking sheet in the preheated oven. Roast for about 25-30 minutes, tossing halfway through, until the vegetables are tender and golden brown.

Add Butter (Optional): If you want to enhance the flavor further, add the unsalted butter to the pan during the last 5 minutes of roasting. This will give the glaze a richer finish.

Garnish and Serve: Once done, remove from the oven and transfer to a serving platter. Sprinkle lemon zest and chopped parsley over the top for a fresh finish.

Enjoy! Serve your Maple Glazed Carrots and Parsnips warm as a delightful side dish to your favorite main course.
