1 pound Brussels sprouts, trimmed and halved

2 medium apples (such as Honeycrisp or Fuji), cored and sliced

1/4 cup pure maple syrup

2 tablespoons olive oil

1 tablespoon Dijon mustard

1 teaspoon apple cider vinegar

1/2 teaspoon garlic powder

Salt and pepper to taste

1/2 cup pecans, roughly chopped (optional)

Fresh thyme or parsley for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.

    Prepare the Brussels Sprouts: In a large bowl, combine the halved Brussels sprouts with olive oil, garlic powder, salt, and pepper. Toss until well-coated.

      Slice the Apples: In the same bowl, add the sliced apples, ensuring they’re mixed in with the Brussels sprouts cut side down.

        Make the Glaze: In a small bowl, whisk together the maple syrup, Dijon mustard, and apple cider vinegar until smooth. Drizzle half of this glaze over the Brussels sprouts and apples, tossing to coat evenly.

          Roast: Spread the Brussels sprouts and apple mixture evenly on the prepared baking sheet. Roast in the preheated oven for 20 minutes.

            Add the Pecans: Remove the tray from the oven after 20 minutes, and sprinkle the chopped pecans over the top. Drizzle the remaining glaze over the mixture. Toss lightly to ensure even coverage.

              Finish Roasting: Return to the oven and roast for an additional 10-15 minutes, or until the Brussels sprouts are tender and caramelized, and the apples are just beginning to soften.

                Garnish and Serve: Remove from the oven and let cool slightly. Garnish with fresh thyme or parsley before serving.
