Maple Bacon Brussels Sprouts

1 lb Brussels sprouts, trimmed and halved

6 slices thick-cut bacon, diced

1/4 cup pure maple syrup

2 tablespoons olive oil

1 teaspoon garlic powder

1/2 teaspoon smoked paprika

Salt and black pepper, to taste

1/4 cup pecans, chopped (optional)

2 tablespoons balsamic vinegar (optional)

Fresh parsley, chopped, for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easier cleanup.

    Cook the Bacon: In a large skillet over medium heat, cook the diced bacon until it becomes crispy, about 5-7 minutes. Using a slotted spoon, transfer the bacon to a paper towel-lined plate, reserving about 2 tablespoons of the bacon fat in the skillet.

      Prepare the Brussels Sprouts: In the same skillet with the reserved bacon fat, add the trimmed and halved Brussels sprouts. Drizzle with olive oil, then sprinkle garlic powder, smoked paprika, salt, and pepper. Toss until the Brussels sprouts are well coated.

        Combine with Bacon: Add the cooked bacon back into the skillet with the Brussels sprouts. Pour the maple syrup over the mixture and toss gently to combine.

          Roast: Spread the Brussels sprouts mixture out evenly on the prepared baking sheet. Roast in the preheated oven for 20-25 minutes, or until the Brussels sprouts are tender and caramelized, flipping halfway through for even cooking.

            Optional Garnish: If desired, in the last 5 minutes of roasting, sprinkle chopped pecans on top to toast them slightly. For an added flavor boost, drizzle a bit of balsamic vinegar over the Brussels sprouts before serving.

              Serve: Remove from the oven and garnish with fresh chopped parsley. Serve warm as a delicious side dish or appetizer.
