Mango Shrimp Avocado Salad

1 lb (450g) medium shrimp, peeled and deveined

2 ripe avocados, diced

1 large ripe mango, diced

1 cup cherry tomatoes, halved

1/2 red onion, finely chopped

1 cup fresh cilantro leaves, roughly chopped

1 lime, juiced (about 2 tablespoons)

2 tablespoons olive oil

1 teaspoon honey (optional)

Salt and pepper, to taste

1 teaspoon chili flakes (optional, for heat)

Mixed greens or spinach, for serving

Instructions
 

Prepare the Shrimp: In a medium-sized pot, bring water to a boil. Once boiling, add the shrimp and cook for about 2-3 minutes, or until pink and opaque. Drain and transfer to an ice bath to stop cooking. Once cooled, drain again and set aside.

    Make the Dressing: In a small bowl, whisk together the lime juice, olive oil, honey (if using), salt, pepper, and chili flakes. Adjust seasoning to taste.

      Combine Ingredients: In a large mixing bowl, gently toss the cooked shrimp, diced avocado, diced mango, cherry tomatoes, red onion, and cilantro.

        Dress the Salad: Drizzle the prepared dressing over the shrimp and mango mixture. Gently mix until everything is well coated, being careful not to mash the avocados.
