Ingredients

4 ripe mangoes, peeled and diced

1/2 cup lime juice (freshly squeezed for the best flavor)

1/2 cup sugar (adjust for sweetness)

1 cup coconut water (or water)

Zest of 1 lime

A pinch of sea salt

Instructions

Prepare the Mangoes: Start by peeling and dicing the mangoes. Make sure they are ripe to ensure optimal sweetness and flavor. Place the diced mangoes in a blender.

Blend the Ingredients: Add the freshly squeezed lime juice, sugar, coconut water (or water), lime zest, and a pinch of sea salt to the blender with the mangoes. Blend until you achieve a smooth mixture.

Taste and Adjust: Taste the mixture and adjust the sweetness if necessary by adding more sugar or lime juice to suit your palate. Blend briefly again if you make adjustments.

Chill the Mixture: Pour the mango-lime mixture into a bowl and cover it with plastic wrap. Place it in the refrigerator for about 1-2 hours until it is nice and chilled.

Churn the Sorbet: Once chilled, pour the mixture into an ice cream maker and churn according to your machine's instructions. This usually takes about 20-30 minutes until it reaches a fluffy, soft-serve consistency.

Freeze the Sorbet: Transfer the sorbet to an airtight container and smooth the top. Place it in the freezer for at least 2-4 hours to firm up further.

Serve: When ready to serve, let the sorbet sit at room temperature for a few minutes to soften slightly. Scoop out into bowls or cones and garnish with lime slices or fresh mint if desired.
