Mango Chicken Bowls

2 large chicken breasts, diced

2 ripe mangos, peeled and diced

1 cup cooked quinoa

1 bell pepper (red or yellow), diced

1 small red onion, finely chopped

1 avocado, sliced

1 cup black beans, rinsed and drained

1 lime, juiced

2 tablespoons olive oil

1 teaspoon ground cumin

1 teaspoon paprika

Salt and pepper to taste

Fresh cilantro for garnish

Marinate the Chicken: In a mixing bowl, combine the diced chicken with olive oil, lime juice, cumin, paprika, salt, and pepper. Cover and let it marinate for at least 30 minutes in the refrigerator.

    Cook the Quinoa: Rinse the quinoa under cold water. In a medium saucepan, combine 1 cup of quinoa with 2 cups of water. Bring to a boil, reduce the heat, cover, and simmer for about 15 minutes or until the quinoa is fluffy and the water is absorbed. Set aside.

      Cook the Chicken: In a large skillet over medium-high heat, add the marinated chicken. Sauté for about 6-8 minutes or until the chicken is golden brown and cooked through.

        Prepare the Vegetables: In the same skillet, add the diced bell pepper and onion. Sauté for 3-4 minutes until they are tender but still crisp.

          Assemble the Bowls: In individual bowls, layer the cooked quinoa, sautéed chicken and vegetables, black beans, diced mango, and avocado slices.

            Garnish: Finish with a sprinkle of fresh cilantro and an extra squeeze of lime juice on top for a refreshing kick.
