Ingredients

1 ripe mango, peeled and diced

1/3 cup chia seeds

2 cups coconut milk (or almond milk)

2 tablespoons honey or maple syrup (adjust to taste)

1 teaspoon vanilla extract

Pinch of salt

Fresh mint leaves for garnish (optional)

Additional diced mango for topping (optional)

Instructions

Prepare the Mango Base: In a blender, combine the diced mango, coconut milk, honey (or maple syrup), vanilla extract, and a pinch of salt. Blend until smooth and creamy.

Combine Chia Seeds: Pour the mango mixture into a large mixing bowl. Add the chia seeds and stir well to combine. Make sure the chia seeds are evenly distributed throughout the mixture.

Chill in the Fridge: Cover the bowl with plastic wrap or transfer the mixture to individual serving cups. Place in the refrigerator for at least 4 hours or overnight, allowing the chia seeds to absorb the liquid and thicken the pudding.

Serve: Once set, give the pudding a good stir. Spoon into serving bowls or glasses. Top with additional diced mango and garnish with fresh mint leaves, if desired.

Enjoy: Serve immediately as a refreshing breakfast, snack, or dessert!
