2 cups whole milk

1 cup heavy cream

¾ cup granulated sugar

⅓ cup cornstarch

½ teaspoon salt

3 large egg yolks

2 teaspoons pure vanilla extract

3 ripe bananas, sliced

1 box of Nilla Wafers (about 12 ounces)

Whipped cream (for topping)

Extra Nilla Wafers and banana slices (for garnish)

Prepare the Pudding Base: In a medium saucepan, whisk together the milk, heavy cream, sugar, cornstarch, and salt until smooth. Heat over medium heat, stirring constantly until the mixture thickens and starts to bubble, about 5-7 minutes.

    Temper the Egg Yolks: In a separate bowl, lightly beat the egg yolks. Once the milk mixture is thickened, slowly pour about a cup of the hot mixture into the egg yolks, whisking constantly to temper them. Then, pour the tempered egg yolk mixture back into the saucepan.

      Cook Until Thickened: Continue cooking over medium heat, whisking constantly, until the pudding is thickened to your desired consistency, approximately 2-3 more minutes. Remove from heat, then stir in the vanilla extract.

        Layering: In a 2-quart serving dish, begin layering the pudding, sliced bananas, and Nilla Wafers. Start with a layer of Nilla Wafers, followed by a layer of banana slices, and then pour a portion of the pudding over the top. Repeat layers until all ingredients are used, finishing with a layer of pudding on top.

          Chill: Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight, to allow the flavors to meld and the wafers to soften.
