8 oz elbow macaroni

2 cups whole milk

1 cup heavy cream

4 tbsp unsalted butter

1/4 cup all-purpose flour

2 cups sharp cheddar cheese, shredded

1 cup Gruyère cheese, shredded

1/2 cup Parmesan cheese, grated

1 tsp Dijon mustard

1 tsp garlic powder

1/2 tsp smoked paprika

Salt and pepper, to taste

2 tbsp truffle oil

1 cup panko breadcrumbs

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

    Make the Cheese Sauce: In a medium saucepan, melt the butter over medium heat. Once melted, whisk in the flour and cook for 1-2 minutes until golden, stirring constantly.

      Add Dairy: Gradually pour in the whole milk and heavy cream while whisking continuously to avoid lumps. Continue cooking until the mixture thickens, about 5-7 minutes.

        Incorporate Cheeses: Lower the heat and add the sharp cheddar, Gruyère, and Parmesan cheese to the thickened sauce. Stir until all the cheese is melted and the sauce is smooth.

          Seasoning: Stir in the Dijon mustard, garlic powder, smoked paprika, salt, and pepper. Adjust the seasoning to taste.

            Combine: Add the cooked macaroni to the cheese sauce, stirring to coat the pasta evenly.

              Prepare for Baking: Preheat your oven to 350°F (175°C). Grease a baking dish (9x13 inch) with butter or cooking spray.

                Assemble: Pour the macaroni and cheese mixture into the greased baking dish. Drizzle the truffle oil evenly on top.

                  Breadcrumb Topping: In a small bowl, mix the panko breadcrumbs with a drizzle of olive oil. Sprinkle this mixture evenly over the macaroni and cheese.
