2 ripe mangoes, peeled and diced

1 cup coconut milk (full-fat for creaminess)

1/4 cup honey or maple syrup (adjust based on sweetness preference)

1 tablespoon lime juice (for a zesty kick)

Pinch of salt

Optional: 1/4 cup shredded coconut (for added texture)

Instructions
 

Blend the Mangoes: In a blender, add the diced mangoes, coconut milk, honey or maple syrup, lime juice, and a pinch of salt. Blend until smooth and creamy.

    Taste Test: Give the mixture a quick taste and adjust the sweetness if needed by adding more honey or syrup.

      Add Shredded Coconut (optional): If you like a bit of texture, add the shredded coconut to the blended mixture and pulse a few times until combined.

        Pour into Molds: Carefully pour the mango-coconut mixture into popsicle molds, leaving a little space at the top for expansion.

          Insert Sticks: If your molds came with sticks, insert them now. If not, you can wait 1-2 hours until the popsicles are partially frozen, then insert wooden sticks.

            Freeze: Place the molds in the freezer. Freeze for at least 6-8 hours or until completely solid.

              Unmold the Popsicles: To remove the popsicles, run warm water over the outside of the molds for a few seconds or gently pull them out by the sticks.

                Serve and Enjoy: Serve immediately on a hot day or store the popsicles in a zip-lock bag or airtight container in the freezer for up to 2 weeks.
