1 lb ground chicken

2 tablespoons olive oil

2 cloves garlic, minced

1 tablespoon fresh ginger, minced

1 red bell pepper, diced

1 cup shredded carrots

¼ cup green onions, sliced

2 tablespoons low-sodium soy sauce (or coconut aminos for a paleo option)

1 tablespoon rice vinegar

1 tablespoon sesame oil

1 teaspoon sriracha (optional for heat)

Salt and pepper, to taste

1 head of Butter or Romaine lettuce, leaves separated

Sesame seeds and lime wedges, for garnish (optional)

Instructions
 

Cook the Chicken:

    In a large skillet, heat the olive oil over medium heat. Add the minced garlic and ginger, sautéing for about 1 minute until fragrant.

      Add the Chicken:

        Increase the heat to medium-high, then add the ground chicken to the skillet. Cook, breaking it apart with a spatula, until browned and cooked through (approximately 5-7 minutes). Season with salt and pepper.

          Incorporate Vegetables:

            Stir in the diced red bell pepper and shredded carrots. Allow them to cook for an additional 3-4 minutes, until they are slightly softened.

              Flavor It Up:

                Add the soy sauce, rice vinegar, sesame oil, and sriracha (if using) to the chicken mixture. Stir to combine and let the mixture simmer for another 2 minutes to let the flavors meld together. Taste and adjust seasoning, if necessary.

                  Prepare Lettuce Wraps:
