2 large sweet potatoes

2 tablespoons olive oil

1 teaspoon paprika

1 teaspoon garlic powder

1 teaspoon cumin

Salt and pepper to taste

1 cup black beans, rinsed and drained

1 cup corn kernels (fresh or frozen)

1 cup shredded cheese (cheddar or a Mexican blend)

1/2 cup diced tomatoes

1 jalapeño, sliced (optional)

1/4 cup sliced black olives (optional)

1 avocado, diced

1/4 cup chopped fresh cilantro

Sour cream or Greek yogurt for drizzling

Lime wedges for serving

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper.

    Prepare the Sweet Potatoes: Wash and peel the sweet potatoes. Cut them into thin fries (about 1/4 inch thick).

      Season the Fries: In a large bowl, toss the sweet potato fries with olive oil, paprika, garlic powder, cumin, salt, and pepper until they are evenly coated.

        Bake the Fries: Spread the seasoned sweet potato fries in a single layer on the prepared baking sheet. Bake for 20-25 minutes, turning halfway through, until they are crispy and golden brown.

          Add the Toppings: Once the fries are done, remove them from the oven. Top them evenly with black beans, corn, and shredded cheese. Return to the oven for an additional 5-7 minutes, or until the cheese is melted and bubbly.
