2 large russet potatoes, cut into thin fries

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1 cup shredded cheddar cheese

1/2 cup crumbled queso blanco or feta cheese

1/2 cup cooked and crumbled chorizo (optional)

1/2 cup black beans, rinsed and drained

1/2 cup sliced jalapeños (pickled or fresh)

1/4 cup sour cream

1/4 cup guacamole

1/4 cup chopped fresh cilantro

1/4 cup diced tomatoes

1/4 cup sliced green onions

Prepare the Fries: Preheat your oven to 425°F (220°C). Rinse the cut fries in cold water to remove excess starch. Pat them dry thoroughly with paper towels.

    Season and Bake: In a large bowl, toss the fries with olive oil, smoked paprika, garlic powder, onion powder, salt, and pepper. Spread them in a single layer on a parchment-lined baking sheet. Bake for about 25-30 minutes, flipping halfway through, until golden brown and crispy.

      Add Cheese and Toppings: Once the fries are crispy, remove them from the oven. Immediately sprinkle the shredded cheddar and crumbled queso blanco evenly over the fries. If using, add the cooked chorizo and black beans as well. Return to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
