8 large eggs

2 cups milk

4 cups chopped stale bread (French or sourdough works best)

1 cup shredded cheddar cheese

1 cup cooked bacon, crumbled

1 small onion, diced

1 bell pepper (any color), diced

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon black pepper

Salt to taste

Fresh chives or parsley for garnish (optional)

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Bacon: In a large skillet over medium heat, cook the bacon until crispy. Remove it from the skillet and drain on paper towels. Leave about 1 tablespoon of bacon grease in the skillet.

      Sauté Vegetables: In the same skillet, add the diced onion and bell pepper to the bacon grease. Sauté for about 5 minutes until the vegetables are softened. Remove from heat and let cool slightly.

        Prepare the Egg Mixture: In a large mixing bowl, whisk together the eggs, milk, garlic powder, onion powder, black pepper, and salt until well combined.

          Assemble the Casserole: In a greased 9x13-inch baking dish, layer the chopped stale bread evenly across the bottom. Sprinkle half of the crumbled bacon, sautéed vegetables, and shredded cheddar cheese over the bread. Pour the egg mixture evenly over the entire dish. Top with the remaining bacon and cheddar cheese.

            Bake: Cover the casserole with aluminum foil and bake in the preheated oven for 30 minutes. After 30 minutes, remove the foil and bake for an additional 15-20 minutes until the casserole is set and golden brown on top.

              Serve: Remove the casserole from the oven, let it cool for about 5-10 minutes, then garnish with fresh chives or parsley if desired. Slice into squares and serve warm.
