1 ripe mango, peeled and diced

1/2 cup coconut milk (canned or carton)

1/2 cup unsweetened almond milk

1/4 cup chia seeds

2 tablespoons maple syrup (or honey)

1 teaspoon vanilla extract

1/4 teaspoon sea salt

Fresh mango slices and mint leaves for garnish

Prepare Mango Puree: In a blender, add half of the diced mango, the coconut milk, and 1 tablespoon of maple syrup. Blend until smooth. Set aside.

    Combine Chia Seed Mixture: In a mixing bowl, whisk together the almond milk, chia seeds, the remaining 1 tablespoon of maple syrup, vanilla extract, and sea salt. Stir well to combine and ensure the chia seeds are evenly distributed.

      Refrigerate: Cover the bowl with plastic wrap or a lid and refrigerate for at least 4 hours (or overnight) until the chia seeds have expanded and the mixture has thickened.

        Layer the Cups: Once the chia mixture has thickened, take serving cups or glasses. Start by adding a layer of the chia pudding at the bottom of each cup. Drizzle a layer of the mango puree on top. Repeat the layers until the cups are filled, finishing with a layer of mango puree.
