1 cup dried green or brown lentils, rinsed

1 medium onion, finely chopped

2 cloves garlic, minced

1 bell pepper (red or yellow), diced

1 teaspoon ground cumin

1 teaspoon smoked paprika

1/2 teaspoon chili powder

1/2 teaspoon salt (adjust to taste)

1/4 teaspoon black pepper

2 tablespoons olive oil

2 cups vegetable broth or water

1 lime, juiced

Fresh cilantro, chopped (for garnish)

For the Avocado Crema:

1 ripe avocado

1/2 cup Greek yogurt (or sour cream)

2 tablespoons lime juice

Salt to taste

Fresh cilantro (optional, for extra flavor)

For Serving:

Corn or flour tortillas

Sliced radishes (optional)

Shredded lettuce (optional)

Salsa or hot sauce (optional)

Instructions
 

Prepare the Lentil Filling:

    - In a medium-sized pot, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

      - Stir in the minced garlic and diced bell pepper, cooking for another 3 minutes until the peppers soften.

        - Add the rinsed lentils, vegetable broth (or water), cumin, smoked paprika, chili powder, salt, and black pepper. Bring to a boil.

          - Reduce the heat to low, cover, and let it simmer for about 25-30 minutes, or until the lentils are tender and the liquid is absorbed. Add a bit more broth or water if necessary during cooking.

            Make the Avocado Crema:

              - In a blender or food processor, combine the ripe avocado, Greek yogurt, lime juice, and a pinch of salt. Blend until smooth and creamy. Adjust the seasoning if needed. You can also throw in fresh cilantro for an extra kick.

                Warm the Tortillas:

                  - While the lentils are cooking, warm the tortillas in a pan over medium heat for about 30 seconds on each side or until pliable. Alternatively, you can heat them in the microwave for 15-20 seconds.

                    Assemble the Tacos:

                      - Once the lentil filling is ready, remove it from heat and stir in the lime juice.

                        - To assemble, place a generous scoop of lentil mixture in the center of each tortilla. Top with avocado crema, shredded lettuce, sliced radishes, salsa, and fresh cilantro as desired.

                          Serve:

                            - Serve your lentil tacos warm, with additional avocado crema on the side for dipping if desired.
