1 tsp baking soda

½ tsp baking powder

½ tsp salt

1 cup unsalted butter, softened

1 ½ cups granulated sugar

1 large egg

2 tbsp lemon zest (from about 2 lemons)

¼ cup fresh lemon juice

1 tsp pure vanilla extract

½ cup powdered sugar (for dusting)

Preheat Oven: Begin by preheating your oven to 350°F (175°C). Line two baking sheets with parchment paper.

    Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, baking powder, and salt. Set aside.

      Cream Butter and Sugar: In a large mixing bowl, use an electric mixer on medium speed to cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.

        Add Egg and Flavorings: Beat in the egg, lemon zest, lemon juice, and vanilla extract. Mix until well combined.
