Crust:

1 ½ cups crushed pistachios (unsalted)

½ cup granulated sugar

½ cup melted unsalted butter

1 teaspoon vanilla extract

Filling:

16 oz cream cheese (softened)

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

Zest of 1 lemon

Zest of 1 lime

½ cup fresh lemon juice

½ cup fresh lime juice

1 cup sour cream

Topping:

1 cup fresh cherries (pitted and halved)

¼ cup granulated sugar

1 tablespoon lemon juice

1 tablespoon lime juice

½ cup chopped pistachios (for garnish)

Fresh mint leaves (for garnish, optional)

Instructions
 

Preheat the Oven:

    Preheat your oven to 350°F (175°C).

      Prepare the Crust:

        In a mixing bowl, combine crushed pistachios, sugar, melted butter, and vanilla extract. Mix until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer. Bake for 10 minutes, then remove from the oven and allow it to cool.

          Make the Cheesecake Filling:

            In a large mixing bowl, beat the softened cream cheese using an electric mixer until creamy. Gradually add in the sugar and continue mixing until smooth. Add the eggs one at a time, ensuring they are well incorporated after each addition.

              Add Flavorings:

                Mix in the vanilla extract, lemon zest, lime zest, lemon juice, lime juice, and sour cream. Blend until the mixture is smooth and creamy.

                  Bake the Cheesecake:

                    Pour the cheesecake filling over the cooled crust in the springform pan. Smooth the top with a spatula. Bake in the preheated oven for 55-60 minutes, or until the edges are set but the center still has a slight jiggle.

                      Cool Down:

                        Turn off the oven, crack the oven door, and let the cheesecake cool in the oven for about 1 hour to prevent cracking.

                          Chill:

                            Transfer the cheesecake to the refrigerator and chill for a minimum of 4 hours, or overnight for best results.

                              Prepare the Cherry Topping:

                                  Assemble:

                                      Garnish:
