Ingredients

1 lb chicken tenders

1/4 cup fresh lemon juice (about 2 lemons)

1/4 cup olive oil

2 cloves garlic, minced

1 tsp salt

1/2 tsp black pepper

1 tsp dried oregano

1 tsp dried thyme

1/2 tsp red pepper flakes (optional, for heat)

Zest of 1 lemon

Fresh herbs for garnish (such as parsley or cilantro)

Instructions

Prepare the Marinade: In a medium bowl, whisk together the fresh lemon juice, olive oil, minced garlic, salt, black pepper, oregano, thyme, red pepper flakes, and lemon zest until well combined.

Marinate the Chicken: Place the chicken tenders in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring all tenders are well coated. Seal the bag (or cover the dish) and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

Preheat the Grill: Preheat your grill to medium-high heat (around 375°F to 400°F). If using a grill pan, apply a little olive oil to prevent sticking.

Grill the Chicken: Remove the chicken from the marinade, allowing excess marinade to drip off. Discard the remaining marinade. Place the chicken tenders on the grill and cook for about 3-4 minutes on one side.

Flip and Finish Cooking: Flip the chicken tenders and grill for another 3-4 minutes on the other side, or until the internal temperature reaches 165°F and the tenders are lightly charred.

Rest and Serve: Remove the chicken from the grill and let it rest for 3-5 minutes before slicing. Garnish with fresh herbs and serve with your favorite sides, like a crisp salad or grilled vegetables.
