Lemon Herb Chicken Thighs

4 bone-in, skin-on chicken thighs

3 tablespoons olive oil

Juice and zest of 2 lemons

4 cloves garlic, minced

1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried rosemary)

1 tablespoon fresh thyme, chopped (or 1 teaspoon dried thyme)

1 tablespoon fresh parsley, chopped (or 1 teaspoon dried parsley)

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon red pepper flakes (optional for heat)

Instructions
 

Marinate the Chicken: In a large bowl, combine olive oil, lemon juice, lemon zest, minced garlic, rosemary, thyme, parsley, salt, pepper, and red pepper flakes. Whisk until well mixed.

    Coat the Chicken Thighs: Add the chicken thighs to the marinade and coat them thoroughly. Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 30 minutes, or preferably 2-4 hours for deeper flavor.

      Preheat the Oven: About 15 minutes before you're ready to cook, preheat your oven to 400°F (200°C).

        Sear the Chicken: Heat a large, oven-safe skillet over medium-high heat. Add the marinated chicken thighs skin-side down and sear for about 5-7 minutes, or until the skin is golden brown and crispy. Flip the thighs and cook for an additional 2 minutes on the other side.

          Bake the Chicken: Transfer the skillet to the preheated oven and bake for approximately 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and juices run clear.
