12 oz (340g) linguine or spaghetti

1 lb (450g) large shrimp, peeled and deveined

4 tablespoons unsalted butter

4 tablespoons extra-virgin olive oil

6 cloves garlic, minced

Zest of 1 lemon

Juice of 1 lemon (about 3 tablespoons)

1 teaspoon red pepper flakes (adjust to taste)

Salt and freshly cracked black pepper, to taste

1 cup cherry tomatoes, halved

1/2 cup fresh parsley, chopped

Grated Parmesan cheese, for serving

Lemon wedges, for garnish

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the linguine and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the rest and set the pasta aside.

    Sauté the Shrimp: In a large skillet over medium heat, add the olive oil and 2 tablespoons of butter. Once melted and hot, add the minced garlic and sauté for about 30 seconds until fragrant.

      Add Shrimp and Seasoning: Add the shrimp to the skillet, seasoning them with salt, pepper, and red pepper flakes. Cook for 2-3 minutes on each side, or until the shrimp are pink and opaque. Remove the shrimp from the skillet and set aside.

        Make the Sauce: In the same skillet, add the cherry tomatoes, lemon zest, and lemon juice. Cook for about 2-3 minutes until the tomatoes are slightly soft. Stir in the remaining 2 tablespoons of butter until melted.

          Combine Everything: Return the shrimp to the skillet and toss gently to combine. Add the cooked pasta along with a splash of the reserved pasta water, mixing well until the pasta is coated in the sauce. Add more pasta water if needed to achieve your desired sauce consistency.

            Finish with Herbs: Remove the skillet from heat and stir in the chopped parsley. Taste and adjust seasoning as needed.
