1 can (15 oz) chickpeas, drained and rinsed

2 tablespoons olive oil

3 cloves garlic, minced

Zest of 1 lemon

Juice of 1 lemon

1 teaspoon smoked paprika

1/2 teaspoon sea salt

1/4 teaspoon black pepper

1/2 teaspoon cayenne pepper (optional, for extra heat)

Fresh parsley, chopped (for garnish)

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare Chickpeas: After draining and rinsing the chickpeas, place them on a clean kitchen towel and pat them dry. Removing excess moisture is key for achieving that perfect crunch.

      Season: In a large mixing bowl, combine the dried chickpeas with olive oil, minced garlic, lemon zest, lemon juice, smoked paprika, sea salt, black pepper, and cayenne pepper (if using). Toss well to ensure all the chickpeas are evenly coated.
