6 bone-in, skin-on chicken thighs

4 cloves garlic, minced

1 large lemon (zest and juice)

2 tablespoons olive oil

1 teaspoon dried thyme

1 teaspoon dried oregano

1 teaspoon smoked paprika

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Preheat the Oven: Start by preheating your oven to 425°F (220°C).

    Prepare the Marinade: In a mixing bowl, combine the minced garlic, lemon zest, lemon juice, olive oil, thyme, oregano, smoked paprika, salt, and pepper. Whisk until well blended.

      Marinate the Chicken: Pat the chicken thighs dry with a paper towel. Place them in a large resealable plastic bag or a shallow dish, then pour the marinade over the chicken. Ensure all pieces are well coated. Seal the bag or cover the dish and marinate in the refrigerator for at least 30 minutes (up to 2 hours for deeper flavor).

        Arrange for Roasting: After marinating, remove the chicken thighs from the marinade and place them skin-side up on a baking sheet lined with parchment paper or in a roasting pan.
