Fresh parsley, finely chopped (for garnish)

Prepare the Marinade: In a medium bowl, whisk together olive oil, minced garlic, lemon zest, lemon juice, smoked paprika, red pepper flakes, salt, and black pepper until well combined.

    Marinate the Shrimp: Add the peeled and deveined shrimp to the marinade, ensuring each shrimp is evenly coated. Cover the bowl with plastic wrap or transfer to a ziplock bag. Marinate in the refrigerator for at least 30 minutes to 1 hour to allow the flavors to meld.

      Preheat the Grill: Preheat your grill to medium-high heat (about 400°F/200°C). If using skewers, soak wooden skewers in water for at least 30 minutes to prevent burning.

        Skewer the Shrimp: Use skewers to thread the marinated shrimp. If using wooden skewers, thread 4-5 shrimp on each skewer, leaving a little space between them for even cooking.

          Grill the Shrimp: Place the skewers on the preheated grill. Cook the shrimp for about 2-3 minutes per side, or until they are pink and opaque. Be careful not to overcook as shrimp can become rubbery.
